Summer Strawberry & Rose Jam
Ripe berries and sweet flowers, for meadow picnics or Summer Solstice tables.

•1 pound of strawberries, hulled and cut in half
•1 cup sugar
•1 tablespoon lemon juice
•1/2 teaspoon rose powder (optional, but adds a lovely floral note)
Add berries, sugar, and lemon juice to a pot, and bring to a gentle boil. Cook over medium heat for about 20 minutes, stirring frequently. When jam is thickened and berries are soft, remove from heat and stir in rose powder, if using.

Transfer to a glass jar, and skim off any foam that rises to the top (not necessary, but helps make the color of the jam extra bright). Cool for a bit, then cover and refrigerate for a few hours to set up, and use within a week.

Serve with fresh bread, warm scones, buttered toast, cheeses, and more!
